Ways to prepare Egg Mayonnaise Sandwich for parties or picnic



Steps to make simple Egg Mayonnaise Sandwich

1. Put eggs (with shell on) in a saucepan with water covering the eggs.
2. Bring to boil for about 10 – 15 minutes.
3. Cool the eggs under running water then remove egg shells.
4. Cut the eggs to quarter and put them in a big bowl.
5. Add mayonnaise and mustard. Season with salt and pepper.
6. Using a fork or egg masher, mash the eggs till fine.
7. Spread thickly on 2 slices of bread.
8. Cover each slice of the bread with additional slice to make 2 sets of egg mayonnaise sandwiches.


Eggs make good sandwich filling. One of most people’s favourite sandwiches – egg mayonnaise sandwich – is also one of the easiest, DIY-able sandwiches (I’m not talking about canned sandwich spread). Egg mayonnaise sandwich is healthy and best served with milk for breakfast or quick lunch – simply yummy and filling!

1 egg is enough to make sandwich spread on 1 slice of bread depending on size of egg. If you want thicker spread, 1 ½ egg for 1 slice of bread makes simply irresistible egg mayonnaise sandwich! Amongst all egg sandwich recipes, I prefer this especially when mustard is added. Therefore although mustard powder is optional, it is strongly encouraged for egg mayonnaise sandwich. Add more if you like the taste. Same goes to mayonnaise – I simply love it so I added more mayonnaise than as recommended in my easy recipe above. The recipe is generic and you can always tweak the taste to your preference.

How to make nice hard boiled eggs? While it seems easy, there are tricks to make the eggs cook just nice – without green colour “ring” or “bruise” around egg yolk. While some people recommend adding salt to the water when boiling eggs, some do not. It is said that adding salt to the water makes egg white “rubbery” BUT egg shells can be easily peeled off instead of sticking to egg white too much. I prefer easy handling to save time so I add salt all the time.

After boiling the eggs, cool them under running tap water. A friend once asked, “Wouldn’t water gets into the egg? Those are tap water!” Well, egg shell has membrane layer underneath is therefore water resistant. Okay, sometimes egg shells cracked when boiled but hard boiled egg’s egg white is also water resistant. If the egg white broke and revealed the egg yolk, no, egg yolk is not water resistant. The yolk will melt. Freak not…this rarely happen when cooking hard boiled eggs. Just don’t “disturb” the eggs too much when boiling. I’m sure you’ll get your egg mayonnaise sandwich perfectly done.
